Cottage Cheese Banana Bread

We’ve used cottage cheese to make a couple savory meals the past few weeks so it’s only right that we balance it out this week with something sweet. This Cottage Cheese Banana Bread takes only a few minutes to prep with simple ingredients and is packed with protein!

Start this one with something to mix all of your ingredients in. A large bowl, food processor, or blender is completely up to you. I prefer hand mixing this or a food processor.

Add into whatever you’re using 3/4 cup of rolled oats, 1 large whole egg, 1 large egg white, 2 as ripe as you can find bananas, 1 teaspoon of vanilla extract, 1/4 cup of unsweetened apple sauce, 1 teaspoon of ground cinnamon, 1 1/2 cups of cottage cheese, 2 scoops of a good tasting vanilla protein powder, 3/4 teaspoon of baking soda, a pinch of salt, some optional sweetener.

What sweetener? I’m using a tablespoon of a sugar free syrup today. Honey, monk fruit extract, brown rice syrup, stevia, and so on will all work great here. Alternatively, might not even need a sweetener if you’re using a protein powder that’s already pretty sweet.

Give those ingredients a quick mix until smooth. Make sure to stop mixing as soon as everything looks mixed together.

If you’re mixing everything together by hand or with a hand mixer you’ll need to use oat flour. You can easily make oat flour by blending your rolled oats together!

Banana Bread Tips

  1. You can use any complimenting flavored protein powder like chocolate to switch up the flavor!
  2. No rolled oats or oat flour? Regular all purpose, gluten free, whole wheat, brown rice, chickpea, and likely more will work just as good (I’ve tried all of these).
  3. No unsweetened apple sauce? Avocado, pumpkin, coconut milk, yogurt, butter, or another large egg. Keep in mind that the macros will change!
  4. You can also use this mix to make cottage cheese muffins though make sure to keep an eye on them as they’ll bake much quicker.

Next, take out whatever you’re using to bake this cottage cheese banana bread in and coat with some non-stick cooking spray or line it with parchment paper.

Pour your mix in then top it with whatever you want. I went with sugar free chocolate chips. You could also mix your chocolate chips into your bread and/or anything else you want for more texture.

Put your cottage cheese banana bread into the oven on 350F/176C for around 40-45 minutes.

Ingredients

  • ¾ Cup Rolled Oats - Turn it into Oat Flour or use another Flour listed above if you're hand mixing this recipe
  • 1 Large Whole Egg
  • 1 Large Egg White
  • 2 Bananas - Ripe!
  • 1 Teaspoon Vanilla Extract
  • ¼ Cup Unsweetened Apple Sauce

Instructions

  • Add all of your ingredients into either a large bowl, food processor, or blender
  • Mix everything together until smooth (make sure to stop as soon as everything is mixed together)
  • Pour your mix into a lined or coated bread pan or dish
  • Optionally top it are add into your mix whatever you want like some Sugar Free Chocolate Chips
  • Bake it on 350F/176C for around 40-45 minutes
