Healthy Low Carb Protein Mug Cake
Craving cake but can’t afford the sugar or calories? This low sugar, low calories, packed with protein, and absolutely delicious Healthy Low Carb Protein Mug Cake recipe is guaranteed to do the trick! The best part? All you need is a microwave, a few ingredients, and a couple minutes.
Start this one with a bowl or for easier clean up, mix everything together right in your mug!
Add into whatever you’re using 1 large egg white, 1 tablespoon of cocoa powder, 1 scoop of your choice flavor protein powder, 1 ounce of unsweetened vanilla milk substitute, 1 teaspoon of vanilla extract, 1 tablespoon of peanut butter or other nut butter, and 1/2 teaspoon of baking powder.
The most important part of this low carb protein mug cake recipe is to use a GOOD tasting protein powder. Whether you use banana, chocolate, vanilla, cinnamon bun, and so on is completely up to you.
If your powder tastes good but isn’t sweet enough, add in 1-2 tablespoons of some sweetener.
Using a flavor like strawberry? Leave out the cocoa powder in the recipe…unless you like chocolate strawberries!
Mix everything together.
If you mixed everything in your mug then head to the next step. If not, take out a mug and optionally coat it with some non-sticking cooking spray.
Coating it will guarantee it comes out without much effort. This is helpful if you want to frost the entire thing or eat it outside the mug.
Microwave your low carb protein mug cake for around :45-:60 seconds. Depending on how powerful your microwave is, it might take more or less time. Keep an eye on it and remember how long it took for next time!
Low Carb Mug Cake Tips
You could also mix it in a shaker bottle the night before and take it with you to work. Pro tip to beat those afternoon cravings.
Remove your mug, let it cool, flip it over, and top it with whatever you want! I topped mine today with 1 container of a vanilla Greek yogurt.

Hands down best low carb baked good I’ve made to date!! I used Quest multi-purpose protein powder, a full egg and real milk… also snuck in a few Skor bits and choc chips. The consistency was spot on! It needed 90 seconds in my microwave but didn’t want it to dry out so checked after 60 and then added time.

Why wouldn’t you use the entire egg? Most of the nutrition (and heathy fat) is in the yolk.
UM. This is absolutely the most brilliant recipe. My husband and I could NOT believe how good this was. We did use a whey/casein blend instead of just whey (tends to taste a little better), but most protein cakes still have a “healthy cake” taste to them even when we use that. But not this. Totally spectacular. Thank you for making this my go-to healthy dessert option! Yay!
