Microwave Bread Pudding with Protein

We haven’t made a quick healthy dessert in a while so today we’re going to reinvent a classic and make a Microwave Bread Pudding with Protein in 2 minutes or less! This recipe uses ingredients you might already have, is simple to make, and comes guaranteed to beat those cravings.

Start this one with either a small mixing bowl or to make it even easier? A shaker bottle. This can be any protein shaker as long as it seals enough to thoroughly shake it.

Add into whatever you’re using 1/2 cup of milk (the highest protein one you can find) or milk substitute and 1 scoop of protein powder. I went vanilla however chocolate or really any other flavor will work good as long as it tastes good.

Give those 2 ingredients a mix or shake until they’re thoroughly combined and there’s no chunks left.

Continue by adding in 1 tablespoon of a sweetener, 1/2 teaspoon of ground cinnamon, 1 teaspoon of vanilla extract, a pinch of salt, 1 large whole egg, and 1 tablespoon of melted butter.

Mix or shake again until those are smooth.

Take out some bread and cut it up into small pieces. I almost always go with 2 Hawaiian rolls (the small ones). If you don’t have access to these, use whatever bread you can find! I will say that a “thicker” cut for bread pudding is always preferred as it’ll suck up more of your mix.

Microwave Bread Pudding

Add your pieces of bread into at least a 1 1/2 cup microwave safe bowl and pour your mix over them. Make sure to press your bread down a bit so everything is as submerged as possible.

You can easily change up the flavor or texture here by mixing in some chocolate chips, raisins, nuts, and so on.

Top your microwave bread pudding with protein with a little nutmeg and put it into the microwave for around 1 1/2-2 minutes depending on how powerful your microwave is.

Pro tip? It tastes just as good, if not better cold so make it with your meal prep, toss it in the fridge, and eat it later that day!

Ingredients

  • 2 Pieces Bread - I like Hawaiian Rolls
  • ½ Cup Milk - or Milk Substitute

Instructions

  • Take out a small mixing bowl or shaker bottle (easiest)
  • Mix or shake together your Milk and Protein Powder
  • Add in the rest of your ingredients aside from your Bread
  • Mix or shake them together
  • Cut up your Bread into small pieces
  • Add your Bread pieces into at least a 1 1/2 cup microwave safe bowl
  • Pour in your mix and press down your Bread pieces to fully submerge them
  • Top it with a little Nutmeg
  • Microwave your bowl for around 1 1/2-2 minutes depending on how powerful your microwave is
  • Eat it as is or put it in the fridge to cooldown (it tastes great cold!)

Since this recipe is best eaten cold (easily stored) and extremely dense/filling, I list it as 2 servings/portions.
You can also drop the fat to 16g in the whole recipe if you half the butter in the recipe (still tastes great!).
