Easy Protein Strawberry Shortcake
I was going through my recipes this week and I realized that we’ve done strawberry shortcake pancakes, a dip, a shake, cupcakes, and even a cheesecake! What we’ve never done? A “regular” Protein Strawberry Shortcake, which is one of my favorite quick and easy healthy desserts. Why? All the different textures and the amount of volume you get for the calories!
To make this one you’re going to start by washing and chopping up a pound of strawberries. Both fresh or frozen work here. Put your chopped strawberries into a mixing bowl.
Add into that mixing bowl, a tablespoon of honey and a couple squirts of some lemon juice. Mix them around to coat them and let them sit for 10 minutes. They’ll soften and release their juices, this is called macerating.

If you want it even sweeter or to lower the sugar a bit you can swap the honey for your favorite sweetener.
What’s macerating? Just a fancy word for tossing fruit with sugar or honey and letting it sit. The sweetener draws out the fruit’s juices, creating a natural syrup.
Pro tip: If you don’t have fresh strawberries, frozen work great too and as they thaw, they release their own syrup, no macerating required.

In another mixing bowl, add 1 1/2 cups of Greek yogurt, 2 scoops of a protein powder, and for more calorie friendly volume (which is completely optional), 1/2 cup of a sugar free whipped topping.
No protein powder? No problem! Use a higher protein Greek yogurt.
Vanilla or Strawberry Protein Shortcake
You can use vanilla or strawberry here, it simply depends on what flavor you want more of. I’ll either go straight vanilla or strawberry Greek yogurt and a vanilla protein powder.

Mix those ingredients together until smooth.
Last, drive to your local grocery store and find your favorite protein strawberry shortcake base! This could be angel food cake (my personal favorite), pound or sponge cake, scones, biscuits, shortbread cookies, wafers, cornbread and so on. Use whatever you’re craving that day or what fits your macros.

Shortcake Layers
Put your choice base into the bottom of whatever you’re going to eat your protein strawberry shortcake out of.
I usually go with a single piece or 1 serving of angel food cake with the ratios I’m using here. I also like to crush it up and make it more of a protein shortcake bowl. This is my favorite method since it helps evenly divide up all the textures!

Top it with your strawberries then with your Greek yogurt mix and repeat if necessary for more layers.

Ingredients
- 1 Pound Strawberries - Fresh or Frozen
- 1 Tablespoon Honey
- 1-2 Squirts Lemon Juice
- 1 ½ Cups Greek Yogurt - Vanilla or Strawberry
- 2 Scoops Protein Powder
- ½ Cup Whipped Topping - Sugar Free
- 1 Piece Angel Food Cake - or Other Shortcake Base (Pound or Sponge Cake, Scones, Biscuits, Shortbread Cookies, Wafers, Cornbread)
Instructions
- Wash and chop up your Strawberries
- Add them into a mixing bowl with your Honey and Lemon Juice
- Let them sit for 10 minutes to macerate
- In another mixing bowl, mix together your Greek Yogurt, Protein Powder, and Whipped Topping until smooth
- Choose or make your Shortcake Base
- Add your Shortcake Base into the bottom of whatever you're going to eat it out of
- Top your base with some of your chopped up Strawberries
- Top your strawberries with your Greek Yogurt mix
- Repeat for more layers
